Setup breakfast buffet โ Arrange plates, glasses, cutlery, and food stations. 5-star hotels have 8-12 stations, budget hotels 3-5. Setup neatness is the guest's first impression.
Refill stations โ During breakfast, plates and glasses run out fast. Refill constantly every 10-15 minutes during peak. For Nusa Dua resorts, peak is usually 08.00-09.30.
Dishwashing โ Dirty plates go to dishwasher, sort glasses and cutlery. Ensure dishwasher temperature is 60-80ยฐC for sanitation.
Post-breakfast cleanup โ Discard leftovers, wipe stations, return clean plates to storage, and sterilize the area.
Communicate with cooks โ Steward is the cook's right hand. If plates for eggs benedict run out, refill immediately. If parsley garnish is low, signal the cook.
For 5-star resorts, usually add: garnish prep (chop parsley, slice lemon wheels), juice station (replenish orange juice, apple juice), and pastry plate-up (rotate croissants and muffins on tray).
Breakfast buffet happens every day, even in low season. This means repeat-shift opportunities are very high โ higher than housekeeping or evening steward's. But not automatic: HR or housekeeping managers prefer hiring trained people.

Housekeeping โ guest room focused, hallways, public areas. More walking, communication with guests. Coordinate with housekeeping manager.
